Moscow Farmers Market over the street banner

September 2021

Corey Oglesby

Keep those summertime vibes alive, Moscow!

As we enter the waning days of summer, I’m finding myself struck by how quickly 2021 has been flying by. It seems like only yesterday that I was still assembling this year’s music schedule, but the Market has already seen more than a dozen fantastic performances from some of the most gifted musicians the Palouse has to offer. But the season is far from over! I couldn’t be more excited about the remaining shows ahead.

As a musician myself, working directly with area bands and performers has been the absolute best part of this job. I know how much work goes into it all—booking shows, rehearsing, driving all over, playing the actual shows, replacing expensive equipment after said shows, etc.—so I’m truly happy to be in a position to offer support and a great venue to my fellow Palouse musicians. As I’ve continued to navigate the twists and turns of this position (and a sort of crazy start to the year in general, ey?), I can say that the musicians I’ve worked with so far have been nothing but kind, patient, understanding, and simply more eager than ever to get out there and play. And, as we’ve seen, Moscow Farmers Market patrons have been just as eager to hear it!

National Farmers Market Week Celebration Recap

The Moscow Farmers Market Commission joined the Free Range Veggie Crew for a day of games, a Shimmy Dance Party, treats made with regional ingredients, and prize basket giveaways. Around 40 Vendors donated to the 4 themed prize baskets, totaling the value of each basket to about $325 as well as enough to make extra prize bags! The basket themes this year were I Knead You, BBQ With You, Treat Yourself, and Surprise Grab Bag. 70 Market patrons entered into the prize drawing in the weeks leading up to the event. We're excited for the turnout and generosity of the Vendors and can't wait to dance next year! Maybe we'll add to our corn, strawberry and peapod costume family!

Recipe of the Month: Frittata

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables. The word frittata is Italian and roughly translates to "fried". This can be the brunch of dreams or a great brinner (breakfast for dinner, anyone?) on a busy weeknight!

There are eggcellent options to make ingredients easy to modify depending on what you purchase from Market Vendors. You'll say "-tata" to any other recipe from here on out!

Ingredients

6 eggs, large enough to cover ingredients (add more if needed)
1/4 cup heavy cream
1 tsp salt, divided (or more to preference)
4 slices thick-cut bacon, chopped (optional) (Add bacon if needed because #bacon!)
2 small potatoes, peeled, and thinly sliced
1/4 tsp freshly ground black pepper (or more to preference)
2 cups baby spinach (or any Market green)
2 cloves garlic, minced
2 tsp fresh thyme
1 cup shredded cheese

Other great additions/alternatives: bell pepper, kale, mushroom, zucchini, cauliflower, broccoli, oregano, onion, squash, tomato, carrot, sausage

Instructions

1. Heat the oven to 400°F. Grease a round pan (pie, cake, Pyrex).
2. Whisk the eggs and cream together using 1/2 teaspoon of the salt.
3. Cook the bacon. Place bacon on a cold frying pan or cast iron skillet then turn on the heat to medium-high and cover with mesh splatter cover if available. Cook by stirring and flipping occasionally until crisp. Remove bacon and place on a plate with a paper towel to absorb grease. Remove all but a thin layer of bacon grease in pan.
4. Sautee potatoes in the bacon grease and add ground pepper and remaining salt. Stir occasionally until golden browned, about 4-6 minutes.
5. Wilt the spinach. Add spinach to pan and add garlic and thyme. After wilted, add bacon to the pan.
6. Add cheese in an even layer to elements in the pan.
7. Pour egg mixture into pan. Make sure it is even over all vegetables. Cook for about 2 minutes until you see the edges start to set.
8. Place in the oven for 8-10 minutes. To check if the frittata is done, stick a knife in the middle. If it does not come out clean, it needs more time (or thyme ;)).
9. Remove and slice into wedges and serve.
